GUM ARABIC
Gum arabic is used in the food industry as a stabilizer, emulsifier, and thickening agent in icing, fillings, soft candy, chewing gum, and other confectionery, and to bind the sweeteners and flavorings in soft drinks.

Gum Arabic (GA) is a soluble fiber obtained from Acacia senegal and Acacia seyal trees grown in sub-Saharan Africa, particularly Sudan. It is one of the most important medicinal plants used in traditional, or alternative, medicine. The main purpose of writing this chapter is to view recent and updated information about GA, which is promising as a medicinal plant and has short- and long-term health potentiality that can be developed as future phytopharmaceuticals to manage and/or treat panoply of various diseases. Pharmacologically, GA has been confirmed to have several therapeutic actions, such as being hypoglycemic, antidiabetic, antioxidant, immunomodulatory, and antiulcer. GA is used by local communities to protect against hepatic, renal, and cardiac complications in diabetic and chronic renal failure patients. The studies on the effects of GA on lipid metabolism in experimental animals are also documented. Ingestion of GA can decrease plasma cholesterol concentrations both in humans and animals.



Gum Arabic or Acacia is the dried, gummy exudate form the stems or branches of Acacia Senegal or of related species prices of Acacia. The trees that produce commercial grade of Gum Arabic grow primarily in the Sudan and Senegal regions of Africa. The trees are about 4.5-6 meters high and live about 25-30 years. Gum Arabic results from an infection of the trees, which yields the gum only when in an unhealthy condition. To accelerate exudation the bark is cut and the exudate allowed to dry, forming “tears” which are collected. Gum is collected by hand every 10 days during the dry season, which varies from October to June. The gum is graded visually by sorting the lumps or tears basically into two grades: the clean amber sorts and hand picked selected gum.
Gum Arabic, also known as acacia gum, chair fund, char good, or mesa, is a natural gum made of hardened sap taken from two species of theacacia tree; Senegal (Acacia) Senegal and Vachellia (Acacia) seyal. The gum is harvested commercially from wild trees throughout the Sahel from Senegal to Somalia, although it has been historically cultivated in Arabia and West Asia.
